Ingredients

Scale

For the Chicken & Broccoli:

  • 2 tablespoons butter
  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups fresh broccoli florets (or 1½ cups frozen, thawed and drained)

For the Creamy Sauce:

  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup milk (or heavy cream for a richer sauce)
  • ½ teaspoon Dijon mustard
  • 1 cup shredded cheddar cheese
  • ¼ teaspoon paprika (optional, for extra flavor)
  • ½ teaspoon lemon juice

Optional Topping:

  • ¼ cup breadcrumbs (for added crunch)
  • 1 tablespoon melted butter

Instructions

  1. Cook the Chicken:

    • Heat butter in a large skillet over medium-high heat.
    • Add chicken pieces, season with salt, pepper, garlic powder, and onion powder.
    • Sauté for 5-6 minutes, until golden brown and cooked through.
    • Remove chicken from the skillet and set aside.
  2. Prepare the Sauce:

    • In the same skillet, add cream of chicken soup, milk, Dijon mustard, and paprika.
    • Stir well over medium heat until the mixture is smooth.
    • Add cheddar cheese and stir until melted and creamy.
  3. Add Broccoli & Chicken:

    • Stir in the broccoli florets and return the chicken to the skillet.
    • Simmer on low heat for 5-7 minutes, allowing the flavors to combine.
    • Stir in lemon juice to balance the richness.
  4. Optional: Add a Crunchy Topping:

    • If desired, mix breadcrumbs with melted butter and sprinkle over the dish.
    • Broil for 2-3 minutes until golden and crispy.
  5. Serve & Enjoy:

    • Serve over rice, egg noodles, or mashed potatoes, or enjoy as a low-carb dish on its own!

Notes

  • Make it Low-Carb/Keto: Use heavy cream instead of milk and skip the breadcrumbs.
  • Gluten-Free Version: Use a gluten-free cream soup and breadcrumbs.
  • Dairy-Free Adaptation: Swap cheddar cheese for dairy-free cheese and use coconut milk instead of regular milk.
  • Protein Swap: Try using rotisserie chicken for a quicker meal or swap for turkey or shrimp.
